Black Venere rice: 160 g

Zucchini: 2-3 medium size

Onion: half

Oil e.v.o. : 3 tablespoons

Mint leaves

Salt: as needed

The black rice with zucchini cream is good to eat and good to see. This is also a tasty dish because of this aromatic rice with zucchini and mint freshness combined together. Try it and let us know!!!

In a medium pot fry gently the grated onion in extra virgin olive oil until translucent, add the rice and stir to toast it.


After few minutes add the salted water and cook for about 40-45 minutes stirring while cooking.


Meanwhile, prepare the zucchini cream this way: wash the zucchini, remove the ends and cut into cubes.


Boil them in salted  water until soft.


Drain and transfer the zucchini  to a blender, add a tablespoon of oil and mint leaves.


Drain the rice and, by using a mold for donut, serve it ring-shaped.

Fill the central hole with the mint-zucchini cream and  decorated the dish to your liking.
