Ingredients

Flour - 300 g

Icing sugar - 50 g

Eggs - 2

Butter - 30 g

Limoncello - 25 ml

Oil for frying - as needed


To decorate:

Icing sugar - as needed

Total : 50 minutes + 1 hour rest time

Chiacchiere are typical Italian fried pastries that are prepared during Carnival. Each region calls them in different way like: cenci, frappe, bugie, cróstoli, guanti, but the recipes are quite similar across Italy. They are delicious dipped in rich chocolate!!!

Directions

Put the sifted sugar and flour in a bowl. Add eggs, softened butter and the limoncello.

Using a fork, mix well in order to combine all the ingredients.

Transfer the mixture on a smooth surface and knead it to obtain a fairly stiff, elastic and smooth dough.
Let it rest about an hour at room temperature, covered with plastic wrap.

After the dough has rested cut it in four pieces.

Roll each one out with a rolling pin so that the dough is 2-3 mm thick
You can roll the dough also through the pasta machine:
starting  from the widest setting (usually number 1 on the dial)
refold and roll  several times (not changing the setting) until you have a rectangular shape.
Change setting grade by grade and finish to roll out the dough by turning the dial to the  narrowest setting (number 5).

Arrange the sheets on a floured surface and with a serrated pastry wheel  cut it into rectangular shape strips.

Make a cut down the middle of each strip to avoid swelling during frying.

Fry a few chiacchiere at a time in hot oil until golden (the right temperature is  180-190 °C).

Drain on paper towels.

Dust with icing sugar when they are cool.
